oscar pr girl’s delicious chicken soup recipe
My admiration for Erika Bearman, aka @OscarPRGirl, is no secret (I mean, how do you think I got up the courage to go from brunette to bleach blonde?). Her twitter wit and tumblr posts are always a sprinkling of wonderful during my day. A while back she shared her recipe for chicken soup (from scratch of course) and I must say, it is amazing. Make sure you get a chance to make this before the weather starts to warm up.
WHAT YOU NEED
2 lbs of chicken (use chicken breasts, no bones, less icky)
5 carrots (chopped)
4 celery stalks (chopped)
3 parsnips (chopped)
1-2 medium to large yellow onions
salt (lots of salt.)
a large stock pot and a strainer with teeny tiny holes.
Heat olive oil in a large stock pot over high heat and brown the chicken, about 6-7 minutes on each side. You want the chicken to be a bit crispy and golden in colour.
Add onions and sautée for a few minutes. Then add the carrots, celery, parsnips, peppercorns, parsley and salt. (TIP: I like to chop up all the veggies before I start anything and have them in a big bowl, ready to dump in when the time comes).
Add enough cold water to cover the ingredients by an inch or two. (You can use soup stock if you want, but with this recipe it isn’t necessary, the end result is super tasty either way). Bring everything to a boil over high heat, give it a stir and let it simmer for at least an hour.
After that, skim any fat off the top and pull the chicken pieces out. Let them cool on a cutting board. Pour the rest of the mix through a super fine strainer (the tinier the holes, the better) into a large bowl (make sure it’s big enough to hold the whole pot of soup). Disgard the parsley stems and peppercorns. Put the broth and the veggies back into the stock pot. Shred the chicken and put that back in too. Add more salt and some pepper to taste, and enjoy!
