simple kale salad

kale salad with lemon garlic dressing

Quick and easy to make, healthy, surprisingly filling
and packed with essential vitamins & nutrients.

what you need

1 bunch of fresh kale
olive oil
1 lemon
1 clove of garlic
salt & pepper

directions

Rip up kale into bite size pieces, leaving the hard stems out. Rinse, drain and set aside in a large bowl. To make the dressing, combine a 1/4 cup of olive oil (little more or little less to your own taste), juice of about half a lemon, 1 clove of garlic (crushed or minced) and salt & pepper all together. I like to use a hand blender or my magic bullet to blend the dressing really well. Pour the dressing over the washed kale and use your hands (wash them first), to massage the dressing into the leafy greens. Kale is a thick, dense leaf and doesn’t absorb the dressing the same way other greens do.

Serve right away or let sit for about half an hour and it’ll taste even better
once the dressing has had time to soak in even more!
