a tasty update to plain old mashed potatoes

horseradish rutabaga mash

A really easy way to make extra delicious mashed potatoes…
[Original recipe from the December 2012 Canadian Living Magazine]

what you need

1 rutabaga (aka turnip or swede)
2 cloves of garlic (I use 3 or 4)
1lb potatoes
1/2 cup sour cream
2 tbsp prepared horseradish
salt & pepper
1/4 cup chopped fresh chives

directions

Peel and cube the rutabaga and potatoes (I don’t peel them, but you can if you want). In a pot of boiling salted water, cook the rutabaga and garlic for 10ish minutes, add the potatoes and cook for another 10-15 minutes, until both veggies are nice and tender. Drain. Using a hand blender (or in a food processor), pulse together the cooked veggies & garlic, adding the sour cream, horseradish, salt & pepper as you go. Put into serving bowl and stir in the chopped chives.

Perfect for Sunday dinner & a delicious accompaniment to a good steak.
