lentil love

So I don’t usually make New Year’s resolutions, but this year I did. After reading about how amazingly healthy lentils are, I resolved that in 2014 I would eat more lentils. Yes, for real. My sister finds this hilarious, so I try to make sure I inform her every time I try a new recipe. The one I found this week is the best yet, so I decided to share it here too.

moroccan lentil salad

what you need

1/2 cup dry lentils
1 cup water
1/2 can of chick peas
2 tomatoes, chopped
3-4 green onions, chopped
1 green pepper, chopped
1 yellow pepper, chopped
1 lime, juiced
2 tbsp olive oil
1/4 cup chopped fresh cilantro
salt & pepper to taste

directions

Place lentils and water in a pot & bring to a boil. Reduce to simmer. Cook for 20-30 minutes or until lentils are tender. Remove from heat and allow to cool.

In a mixing bowl, combine all of the other ingredients and toss well. Add the lentils once they are cool & toss again. Refrigerate for 20 minutes and serve chilled.

 

This is the easiest thing to make and keeps really well in the fridge for a few days. It is a really healthy lunch to take to work! I made it last week and I’m making it again today. Can’t get enough.
