lemon & dill baked chicken
Baked chicken breasts with loads of flavour…
what you need
2-3 cloves of garlic
chicken breasts (fresh or frozen)
salt & pepper
Cover the bottom of a glass baking dish with a thin layer of olive oil (so the chicken doesn’t stick to the pan). Crush the garlic and spread about half of it all over the bottom of the baking dish. Chop up half of the fresh dill and sprinkle it in the bottom of the baking dish. Add a bit of salt and pepper in the bottom as well, and then squeeze the juice from half of the lemon in the bottom too. Put the chicken breasts in the baking dish in a single layer and repeat the above instructions, but on top of the chicken breasts. Slice a few circular lemon slices to put on top of each of the chicken breasts (mostly because it looks pretty). Bake at 350 for about 35 minutes, or 45 minutes – 1 hour if you are baking the chicken from frozen.
Enjoy warm with rice or quinoa…
and save the leftovers, which are delicious cold, sliced up and added to your yummy kale salad for lunch tomorrow.
