get your greens

I have this smoothie for breakfast almost every day. It is really delicious and incredibly healthy. The greens are a great source of iron, especially when combined with citrus (lemon/orange juice) as citric acid helps your body absorb iron. Add more Greek yogurt/chia seeds/avocado for lots of protein. And a tip: don’t use berries in this… while they can be a delicious addition, mixed with the greens this will create an awful looking brown concoction, and I’m just not into that.

what you need

spinach and/or kale
orange juice and/or juice of ½ fresh lemon
1 small (or ½ large) banana
mango
pineapple
chia seeds
plain or vanilla greek yogurt
¼ of an avocado (optional)
a few fresh mint leaves (optional)

directions

Throw a generous handful (or two) of greens (spinach or kale, or both, and the mint leaves if you’re using them) into your blender/magic bullet.  Add fresh lemon juice and some water or orange juice to the greens (I fill my magic bullet up ¼ of the way, maybe a bit more, with the liquid) and blend until all the greens are liquefied. Add a large spoonful of Greek yogurt and a generous teaspoon (maybe 2) of chia seeds. Add in the banana/mango/pineapple – as much as you like, really, and ¼ of an avocado. (if you’re using lots of fruit, add some more liquid)… and blend until smooth.
